And a happy (almost) start to the week to you all! Before we moved to Hong Kong we were pretty set in our 'Meatless Monday' routine. And we loved it. Becoming a Mum for the first time in a foreign country can be tough. Running your own business can be tough. Combine the two together, and there isn't alot of spare time to do things, particularly as we don't have a helper. Though we do have 2 dogs in addition to the new baby! When I meet with new commercial customers I am always curious to see what, if any, Almond Milk they have been using.  When I turn the bottle to read the ingredients list I am usually pretty horrified at what is actually in there.  Here is a list of the ingredients in a bottle of 'Unsweetened Almond Milk' I recently encountered:  Almond milk (Water, Almonds), Vitamin/Mineral Blend (Calcium Carbonate, Vitamin A, Vitamin E, Vitamin D2, Vitamin B12, Vitamin B2, Zinc), Sunflower Lecithin, Sea Salt, Potassium Citrate, Natural Flavours, Locust Bean Gum, Gellan Gum. Hello All! I am yet to meet a person who doesn't like Buttermilk Chicken, though obviously I do meet alot of people who cannot tolerate dairy. So we set about attempting a dairy free version, of course with the addition of a side of cornbread, which just makes the whole thing into a heavenly feast.  This recipe is actually really easy to make : mostly it is making the marinade, and leaving it all in the fridge overnight.
